Help me to know why stainless steel cooking pans are preferred with extra copper bottom.

Because the thermal conductivity of copper is greater than that of steel, therefore when the cooking pans fitted with extra copper bottom is placed over the flame, more heat flow into the pan, as a result cooking of food become faster.
